
6oz, 175g caster sugar
6oz, 175g butter
2 eggs
7oz, 200g self-raising flour
half teaspoon baking powder
grated rind of an orange
juice of half an orange (make icing with other half)
tablespoon marmalade
Prepare a 7" round tin and preheat oven to about 4/350/180. Beat the 2 eggs in a separate bowl. Cream butter and sugar. Add the beaten egg gradually, beating in between each addition. Fold in the sieved flour and baking powder. Mix in the orange juice, marmalade and grated orange rind. Bake in the centre of the oven for about 50 minutes. Make icing by mixing icing sugar and remainder of orange juice. When cake has cooled remove from tin and ice.
