The start of comfort food...
This is the time of year when thoughts begin to turn to home-made bread and soups and slow-cooked casseroles. This bread is not difficult to make
I mixed almost a pint of full-milk and water and warmed it a little, in a saucepan. I then put about a tablespoon of this in a bowl and blended well with half an ounce of yeast (Health food shops keep this). I put half a pound each of mixed grain and very strong plain white flour and mixed well with a good teaspoon of salt. I added the yeast mixture and slowly incorporated the milk-water. I kneaded really well for 10 minutes, adding a bit of flour if it became too sticky. I covered the bowl and left in a warm place for an hour. Then I kneaded it madly for another 3 minutes, formed into a round and left that rise for about half an hour. Then I baked it for about 30 minutes in a fairly hot oven. This may seem like a lot of trouble for a loaf of bread...do double the mixture, make 2 and freeze one. The process is also actually quite relaxing!
