
A generous spread of some home-made plum jam has given a victoria sponge cake a taste of autumn...only an ordinary cake, but one we all really like. I made it using 6oz of self-raising flour, sugar and butter plus 3 eggs, but rather than cream the butter and sugar by hand, beat in the eggs and then fold in the flour I threw everything in the mixer...it still makes a great cake.
