Homemade mincemeat
Enough prevarication; time to get on with the mincemeat. Actually, a nice relaxing job - once you've done the shopping bit!
1lb (450g) currants
1lb (450g) raisins
1lb (450g) sultanas
8oz (225g) chopped mixed peel
1lb (450g) cooking apples, cored and chopped
4oz (110g) chopped, blanched almonds
1lb (450g) dark soft brown sugar
8oz (225g) shredded suet
1 tablespoon good marmalade
1 teaspoon grated nutmeg
1 teaspoon ground cinnamon
1 teaspoon mixed spice
grated rind and juice of 1 orange
grated rind and juice of 1 lemon
6 tablespoons of whiskey
Mix all ingredients in a large bowl, stirring in the whiskey last. Leave the mixture overnight to allow the flavours to develop. Put into clean sterilized jars, making sure you seal well. leave for a few weeks.
