
This is such an easy cake to make. Any dried fruit would be great...I've used just what I'd got in the cupboard...juicy glace cherries and sultanas.
1 and a half cups sultanas
half a cup of cherries
1 cup soft brown sugar
2oz butter
2 cups self-raising flour
1 large egg, beaten
half a teaspoon mixed spice
Grease a large loaf tin and line the bottom.
Put the sultanas, cherries, and butter into a large saucepan with a cup of water. Bring to the boil and simmer for two minutes.
Remove from the heat and leave to cool a little. Add the sugar and stir. Stir in the egg, flour and mixed spice.
Bake at 150C, gas mark 2 for about 1 hour 20 mins.
