
Noreen and Brian came over at the weekend and we had this summer fruit sponge for dessert. It's just a sponge base, made by creaming together 4oz butter and 4oz caster sugar. Beat in 2 eggs and fold in 4oz SR flour.
Grease and line the base of a square cake tin and bake in moderate oven until risen and golden.
I added a little sugar and a squeeze of lemon juice to the whipped cream. Pile summer fruits on top...I used raspberries, strawberries and blackcurrants. Delicious with some pouring cream or creme fraiche.
